Barfi – It is a fudge-like Indian sweet mostly made with milk products like, milk solids(mawa/khoya), or milk powder along with few more flavoring ingredients.
As a child when my mom purchased this burfi in India from a “Halwai” store. I used to gulp it up and leave no crumbs behind, I loved them. Perfect blend of vanilla and chocolate. When I moved to USA, I missed this barfi a lot. I found many versions of this barfi in USA also, but could never get the same texture and taste like it did in India.
My family used to send me this sweet during occasions from India (thank you family 😊), but it would never be enough for me.
Many many years later when cooking became part of me, I thought to myself, why not try to make these at home. So, I began a search for this recipe. It took many recipes and trials before I created my recipes to come up with this ever so close recipe, which would feel and taste similar from a Halwai store in India. I have made this multiple times and have enjoyed each item. Hope you all enjoy making and eating this a well.
Chocolate Barfi
Ingredients
MAIN INGREDIENT
- 2 Cups Khoya or 350 Grams grated
- 3/4 Cup Granulated Sugar
- 1 Tbsp Pistachio finely chopped for garnishing
- 2 Tsp Ghee
- 1 Tsp Vanilla Extract
- 1 Tsp Rose Water optional
- 2 Tbsp Cocoa Powder unsweetened
Instructions
- Grease a rectangular bowl for the layer. Keep it aside. Grate Khoya
- Heat a non-stick pan on low heat and add ghee.
- Once the ghee has melted, add grated khoya and cook for ~5 minutes. Keep the heat on medium.
- After 5 minutes add sugar and mix until it melts. Keep stirring continuously.
- By now the khoya will become thick and should be leaving the sides of the pan. Lower the heat.
- Divide the mixture into half and take out half of the mixture to use later.
VANILLA LAYER
- Add vanilla extract and mix well.
- Pour the mixture in the greased bowl and spread evenly. Keep it aside.
CHOCOLATE LAYER
- In the same pan add half khoya mixture.
- Add cocoa powder and mix well keeping it on low flame.
- Mix well keeping it on low flame.
- Now pour this chocolate mixture over the white layer and spread evenly.
- Garnish with chopped pistachios.
- Let it cool down completely before cutting pieces. About 30 minutes.
- Chocolate burfi is ready to enjoy.
