Fall is all things pumpkin season. But you don’t need a season to bake these yummy, moist pumpkin spice cupcakes. This was my first-time baking these and they are a hit, we love them.
They are super easy to make and bake, a must for pumpkin lovers. Caution though, some of my cupcakes disappeared without the frosting. Hmm? Hehe. This cupcake has the perfect combination of sweetness and spice, just like this site.
Pumpkin Spice Cupcakes
Pumpkin spice cupcakes with cream cheese frosting. YUM!
Ingredients
- 2 piece Eggs (room temperature)
- 1 1/4 cups Granulated Sugar
- 1 cup Pumpkin Puree
- 3/4 cup Vegetable Oil
- 1 1/2 cups All purpose flour
- 1 tbsp Baking soda
- 1/2 tbsp Pumpkin spice
- 1/2 tbsp Vanilla extract
- 1/4 tbsp Salt
Instructions
- Preheat the oven to 400 degrees F. Coat a 12-cup and a 6-cup muffin tin with cooking spray, or you can use paper liners.
- Place the eggs, sugar, pumpkin puree and oil in a bowl. Whisk until smooth.
- Add the flour, baking soda, baking powder, pumpkin pie spice, vanilla extract and salt to the bowl.
- Stir until just combined
- Divide the battery evenly among the 18 muffin cups.
- Bake for 15-18 minutes, or until lightly brown and a toothpick inserted in the center of a cupcake comes out clean.
- Cool for 5 minutes in the pan, then transfer the cupcakes to a wire rack to cool completely.
- Enjoy the with your favorite frosting.
