Veggie Grilled Sandwich (Bombay Street Style)

Bombay style sandwich is a classic Indian street food recipe! This grilled snack is stuffed with veggies & cheese, making it the best sandwich ever! Plus, it can be made in 15-20 minutes.

Ingredients
  

  • 24 Bread Slices (Fresh Sourdough or Home Style White) yields 12 sandwiches
  • 1 ½ Tbsp Butter
  • ½ Cup Cilantro/Mint Chutney
  • 1 Cucumber finely chopped
  • 1 Beetroot finely chopped
  • 1 Onion finely chopped
  • 1 Carrot finely chopped
  • 1 Capsicum/Bell Pepper finely chopped
  • 2 Tbsp Amul Cheese grated or (cheese of your choice)
  • 4 Tbsp Tomato Ketchup or tomato hot and sweet ketchup
  • 1 Tsp Red Chili Powder
  • ½ Tsp Black Pepper
  • ½ Tsp Cumin Powder
  • 1 Tsp Black Salt optional
  • ½ Tsp Salt or per taste

Instructions
 

  • First, finely chop all the vegetable and place into a bowl, all together. Next, grate the cheese at this point and keep aside.
  • In a bowl of all chopped vegetables (beetroot, cucumber, onion, carrot, and capsicum/bell pepper), add red chili powder, cumin powder, black pepper, ketchup, black salt, and salt. Mix well until combined.
  • Next, take two bread slices and on one slice spread the butter.
  • And on the other spread the cilantro/mint chutney.
  • Now, add the veggie mixture on the buttered slice of bread. Spread evenly to form a layer.
  • Add the grated cheese on top of the veggie mixture and close the sandwich with the other bread slice that's smeared with chutney.
  • Place the sandwich in a sandwich/panini maker and grill it for approximately 5 minutes or until preferred grilled color/texture appears.
  • Once done, please the grilled sandwich on cutting board. Cut into slices and garnish some cheese on top.
  • Serve with chutney or ketchup on the side. Enjoy!

Notes

  1. I used Amul Cheese which is popular indian cheese brand, and it taste really good with this kind of sandwiches. But you can substitute with Pepper Jack cheese to get similar taste.
  2. I used Maggie Hot & Sweet tomato ketchup which are sold in Indian grocery stores here in USA. But you can substitute with regular tomato ketchup.
  3. Bread quality is very important when making this sandwich. The sandwich will taste the best when used bread like sourdough, italian or home style white bread.
